(Makes 8 small flapjacks or 6 larger flapjacks)

  • 6 tablespoons (1 x 50 g sachet) GENESIS High Protein, Gluten Free Powder (Chocolate, Banana or Vanilla)
  • 2 eggs
  • 1 tablespoon cocoa powder (optional if you would like chocolate flapjacks)
  • 1 large banana
  • pinch of salt

Combine the peeled banana, eggs, Genesis, cocoa and salt in a blender. Blend until the mixture is smooth. Heat a non-stick frying pan over medium heat. (Add a very thin layer of oil, if you don’t have a non-stick pan.) Cook spoonfuls of the batter until golden brown on both sides (here’s your chance to get the kids to use the shapes). Serve with a fresh fruit of your choice. A drizzle of honey and sprinkle of ground cinnamon will also be delicious.

“I have seen too many people, especially in impoverished communities, being fed empty calories. It is our passion to see South Africa develop into a healthy country,” says Michelle Bristow, Genesis Nutritional Products’ CEO.

What are functional foods and why are they important?

Functional foods provide health benefits beyond just energy and essential nutrients. The health promoting and disease preventing properties of these foods has led to a massive upsurge in their consumption. Furthermore, the increase in health care costs and the facts that most of us are living longer, giving momentum to the growing enthusiasm and wide-spread appreciation of how a balanced nutritionally complete diet is key to managing health and improving the body’s immune responses.

Our CEO’s motivation to get involved with functional foods in South Africa.
