GENESIS™ Gluten-Free Banana Bread
Ingredient list:
- 4 medium-sized ripe bananas (the riper, the sweeter)
- 2 eggs, beaten
- 2 tablespoons (30 ml) honey
- 1 teaspoon (5 ml) vanilla essence
- 1½ cups (375 ml) GENESIS™ High Protein Powder (Banana or Vanilla)
- 1 teaspoon (5 ml) ground cinnamon
- 1 teaspoon (5 ml) bicarb
- pinch of salt
- 1 extra banana, sliced, to garnish top of loaf before baking (optional)
To serve (optional):
- ⅓ cup (80 ml) double thick or low-fat Greek yoghurt
- Extra honey
Method:
- Preheat oven to 180 °C. Line and lightly grease a 1,5 litre loaf tin with a little bit of oil.
- Mash the bananas in a large mixing bowl with a fork.
- Add the eggs, honey and vanilla to the bananas and whisk until well combined.
- Add the GENESIS™ Banana OR Vanilla, with the cinnamon, bicarb and salt. Gently fold the dry ingredients into the liquid using a spatula until just combined. Take care not to overmix.
- Pour the batter into the prepared loaf tin and smooth on top. Decorate the top of the loaf with the extra banana before baking.
- Bake for about 50-60 minutes or until a cake tester comes out clean. Allow the loaf to cool in the tin for 2-3 minutes before turning it out onto a cooling rack. Allow to cool completely. Note that the banana bread will lose a bit of volume as it cools down.
- Serve with yoghurt and a drizzle of honey, if preferred.
