GENESIS™ Gooey Gluten-Free High Protein Cranberry Cookies
Ingredient list:
- 1 cup (250 ml) butter, softened
- 1½ cups (375 ml) light brown sugar
- 2 large eggs, beaten
- 4 teaspoons (20 ml) vanilla essence
- 3 cups (750 ml) GENESIS™ High Protein Powder (Vanilla)
- 1 teaspoon (5 ml) bicarb
- ½ teaspoon (2,5 ml) baking powder
- ½ teaspoon (2,5 ml) salt
- 1 teaspoon (5 ml) ground mixed spice or ground cinnamon
- ¾ cup (180 ml) dried cranberries, chopped
Method:
- Preheat oven to 180 °C. Line 2-3 large baking trays with baking paper.
- In a stand mixer, or using a large mixing bowl and electric beater, cream together the butter and sugar until light and fluffy. Beat in eggs and vanilla until well combined.
- Add the GENESIS™, bicarb, baking powder, salt and spice to the butter mixture and mix until well combined. Take care not to overmix. Fold in cranberries.
- Scoop a heaped tablespoon of dough (depending on how large you want the cookies) onto the prepared baking trays. Space evenly apart so that the cookies don’t bake into each other. Don’t flatten the cookies, so that the end result has a rustic look.
- Bake for approximately 12-15 minutes or until light golden brown. When removing the cookies from the oven they will still look doughy and be soft but will firm up once cooled down.
- Allow to cool on the baking tray for a few minutes before placing them onto a cooling rack to cool completely.
